Coconut rice




Coconut rice

Ingredients

·       Cooked rice                     - 2 cups
·       Freshly grated coconut   - ½ cup
·       Onion                               - 1
·       Green chillies                  - 4
·       Salt to taste

For seasoning

·       Oil                            - 2 table spoon
·       Mustard seeds       - ½ teaspoon
·       Channa dhal            - 1 teaspoon
·       Urad dhal                 - 1 teaspoon
·       Asafoetida               - ¼ teaspoon  
·       Cashews                 - few
·       Curry leaves            - few
·       Ghee                       - 1 table spoon


Method

·       Cut the onion & green chillies into lengthwise
·       Heat the kadai with 2 table spoon of oil add all above the seasonings one by one except ghee, fry it for one minute.
·       Add onion & green chillies till the onion get soft
·       Add the grated coconut fry for another one minute & switch off the stove.
·       Finally add cooked rice, ghee & salt mix it well.
·       Now the easy coconut rice is ready to serve.
