Lemon rice ( Chitranna )




Lemon rice ( Chitranna )

Ingredients

·       Cooked rice                     - 2 cups
·       Lemon juice from            - 3 lemons
·       Turmeric powder             - ¼ teaspoon
·       Ginger                              -1 inch piece
·       Green chillies                  - 5
·       Mixed vegetables            - ½ cup
·       Salt to taste.

For seasonings

·       Oil                                    -5 table spoon
·       Mustard seeds                - ½ teaspoon
·       Cumin seeds                   - ¼ teaspoon
·       Channa dhal                    - 1 teaspoon
·       Urad dhal                         - 1 teaspoon
·       Red chillies                      - 3
·       Asafoetida                       - ¼ teaspoon
·       Peanuts                           - 2 table spoon
·       Curry leaves                    - few.


·       Coriander leaves for garnishing.

Method

·       Cut the ginger into small pieces & green chillies into length wise, keep it aside.
·       Fry the peanuts with 1 teaspoon of oil & keep aside.
·       Heat the kadai with 5 tablespoon of oil, add all the above seasoning ingredients one by one except peanuts.
·       Let the seasonings fry for a minute add turmeric powder, lemon juice & switch off the stove.
·       Add cooked rice, fried peanuts & salt - mix it well.
·       Garnishing with coriander leaves & serve with pappad.
