Lemon Rice Vermicelli





Lemon Rice Vermicelli

Ingredients

·       Rice vermicelli         - 1packet
·       Juice from lemon     - 1
·       Turmeric powder     - ¼ teaspoon
·       Onion                       - 1
·       Green chillies          - 4
·       Mixed vegetables    - ¼ cup( finely chopped )
·       Salt to taste.

Coriander leaves for garnishing

For seasoning

·       Oil                            - 4 table spoon
·       Mustard seeds        - ½ tea spoon
·       Cumin seeds           - 1/2tea spoon
·       Channa dhal            - 1 tea spoon
·       Urad dhal                 - ½ teaspoon
·       Asafeotida               -1/4 teaspoon
·       Curry leaves            - few


Method

·       Boil enough water add 1 teaspoon of oil, ½ teaspoon salt & rice vermicelli, cook it till the vermicelli get soft.
·       Rinse the vermicelli in cold water & keep it aside.
·       Heat the kadai with 4 table spoon of oil add all the above seasoning ingredients one by one fry till the ingredients get golden colour.
·       Add finely chopped onions, green chillies, mixed vegetables & turmeric powder - let it cook for 3 minutes
·       Add lemon juice, salt & cooked vermicelli - mix it well and finally garnishing with coriander leaves.
·       Now the tasty lemon rice vermicelli is ready to eat.
